Bare Life Dessert Pizza Dough

While this “equation” may seem silly to mathematicians (that includes Mr. Foodie), those of us who are in to word play this is fun! And for those who know me as a poet, translator, language professor and / or foodie, you know I’m guilty of giggling every March 14th. So for this year’s pi / pie day, I want to share with you a pie that is a cross between a pizza and a dessert pie.

Chocolate Dessert Pizza

What could be better than a chocolate dessert pizza, am I right? This just sounds to me like a chocoholic’s slice of heaven to me. I have a dessert pizza dough recipe in Confections of a Chocoholic which is sweetened as well as flavored with vanilla, but I have always thought that it would be pretty darn amazing to make a chocoalte dessert pizza dough. When I did, the whole family was left wanting more. As you can see in the photos and my toppings combination ideas, there are various ways to desgin your dessert pizza. One of my favorites is to make it inspired by candies such as Peanut Butter Cups and Twigs. My other favorite is to make it a fondue pizza by topping it with fruit and whipped coconut cream which is one of the easiest ways to get the little ones to eat fruit in their dessert. Don’t believe me? I triple dog dare you to try it with your little one ;)

Sunflower seed butter & chocolate dessert pizza (“peanut butter cup pizza”).

Bare Life Dessert Pizza Dough

Yield: 2 - 10” pizzas

Ingredients

  • 1 ½ cup cassava flour

  • ¼ cup arrowroot or tapioca flour

  • ¼ Tbsp. Bare Life

  • 1 Tbsp. psyllium husk powder

  • 1 tsp. baking soda

  • 1 1/3 - 2/3 cup water

  • ¼ cup avocado oil

  • 2 eggs, room temperature or 2 flax eggs (2 Tbsp. ground flax seeds + 6 Tbsp. water)

Method

  1. Whisk together dry ingredients in a large bowl until well blended.

  2. Mix all wet ingredients in a medium bowl or measuring cup.

  3. Mix wet ingredients into dry blending until uniform dough forms. Begin with lesser amount of water & slowly add more as needed - dough should be moist like a bread dough.

  4. Spread dough manually onto greased 2 - 10'“ pizza or pie dishes.

  5. Bake 22 - 27 minutes at 350ºF, the crust is ready when visibly dry & springs back a bit when pressed.

  6. Remove from oven & allow to cool.*

  7. Top with chocolate sauce or seed / nut butter & toppings such as fruit, nuts or seeds.

Notes

* If you are using toppings that should be cold such as whipped coconut cream, make sure the crust is completely cool before topping.

If you would like to melt chocolate chips as a simple ganache, simply place them on the hot / warm crust and, as they melt, spread to make a smooth “sauce”. Top with the other toppings you have chosen. When to top will depend on which toppings you choose. For example, if you want the toppings to melt or blend into the war chocolate, then add before it sets. If you prefer to have the toppings be separate, allow the chocolate to set.

Fondue Fruit Pizza: dough + ganache + fruit + whipped coconut cream, optional

S’Mores Pizza:  dough + ganache + marshmallow + chocolate chips

Twigs™ Pizza: dough + Caramel (see p. 47 of Confections of a Chocoholic) + ganache

Trail Mix Pizza: dough + ganache + nuts or seeds + Caramel Sauce (see p. 47 of Confections of a Chocoholic).
