Bare Life Whole Food Ice Cream
I Scream, You Scream!
Oh My Garsh. If you have tried my Chocolate Whole Food Ice Cream from Confections of a Chocoholic, you know that ice cream made from whole food is amazing! So as part of the Bare Life recipe challenge, I thought: “Why not try the whole food ice cream using my favorite hot cocoa mix?” So after adjusting the recipe to what I thought would be the right ratios, I gathered the ingredients and my favorite little taste testers and have this flavor to share with you along with some ideas for flavor and texture variation.

Bare Life Whole Food Ice Cream
Yield: about 1 pint
Ingredients
1 – 13.5 oz. can coconut cream
1 banana
2 Medjool dates, pitted (optional to add a caramel flavor)
6 Tbsp. Bare Life
1 1/2 Tbsp. arrowroot flour
Method
Blend all ingredients in high speed blender until smooth.
Place in 2 silicone mini-loaf pans.
Freeze in pans (stirring occasionally to help freeze more quickly) or use ice cream maker according to manufacturer’s instructions.
Enjoy when frozen & at your preferred texture.
Optional add-ins -
1 tsp. ground cinnamon
1 tsp. vanilla extract or ½ tsp. vanilla powder - cacao nibs
Flavor Variations
Rocky Road: add coarsely chopped almonds & marshmallows.
Faux PB Cups inspired: add sunflower seeds or SunFun Butter™ as ribbons.
Chocolate Caramel: add chopped dates or date caramel as ribbons.
