Yellow Dock Vinegar
This week’s Yellow Dock Root recipe focuses on using the herb as a condiment that can be added to foods to help iron absorption. This simple vinegar recipe is based on that of Rosalee de la Forêt’s and the hardest part is waiting for it to be ready.
The infused vinegar can be used with Yellow Dock Infused Honey (next week’s recipe) to make a salad dressing. By adding these condiments to greens or used as a dressing on a side dish or meat dish can help use and absorb the iron in the meal while adding an earthy flavor with elements of sweet and sour.
Yellow Dock Root Vinegar
Ingredients
1 cup dried yellow dock root
apple cider vinegar
Method
Place roots in a pint jar covering them fulling with ACV.
Store in pantry & strain after a few weeks.
Enjoy on salad, cooked vegetables or anywhere you would use vinegar.
