Bare Life Chia Pudding
Dessert for Breakfast?
If you have been following me for a while, you know that I have no problem serving dessert for breakfast, BUT it needs to be healthy, nutritionally dense and / or whole food based in order for me to do so.
Chia pudding for me is not necessarilly dessert as I usually do not add a lot of sweetener. My basic chia pudding can be found in my cookbook Pizza, Noodles, Desserts. Oh My! where I like to top it with blueberries.
As a professor of chocolate history, tasting and making, I have often experimented with cacao in recipes where one may not usually use it. Chia pudding is no exception. During my last January Term class, I wanted to modify my plain chia pudding recipe by combining it with my favorite hot cocoa mix resulting in today’s recipe which uses Bare Life Coconut Hot Cocoa Mix. This is a deliciously chocolate version that can be enjoyed as is or dressed up with some of the topping ideas you can find following the recipe.
Bare Life Chia Pudding
Yield: 2 servings
Ingredients
Method
Whisk milk, Bare Life & chia seeds in a bowl until incorporated.**
Transfer pudding to 2 - 8 oz. Mason jars or desires serving bowl.
Chill overnight or for at least 4 hrs until pudding is set.
Serve chilled with desired toppings of choice.
*You can choose light or full fat coconut milk keeping in mind that full fat will be thicker & creamier as pictured above.
**Pudding mixture can be blended until smooth if you prefer a smoother texture.
Optional topping ideas: blueberries, whipped cream, coconut flakes, chocolate syrup.
